NiOR Market Pop-Up Event Announcement
“A story about “Dear All””
“Dear All” is a coffee stand located along Koshu Kaido in Sasazuka, which opened in 2016.
The shop was born from the theme, "Any way is fine, even if you just stop by for a moment. All the better if there's delicious coffee." It is co-managed by Makoto Minemura, who serendipitously embarked on the path of a barista, and Yutaro Hoshi, who aspired to support people's daily lives.
The encounter between Dear All and UNDECORATED took place in 2021.
They provided coffee at the "UNDECORATED x FRAMA" event, where we also had the opportunity to speak with Mr. Minemura.

Two years ago, when we spoke, the Sasazuka shop was bustling with many visitors despite the COVID-19 pandemic.
The bright space, dominated by white and wood and filled with natural light, remained unchanged.
Today, it was also lively with people enjoying coffee at their leisure, accompanied by conversation with Mr. Minemura and Mr. Hoshi.
The coffee at "Dear All" is described as "coffee that isn't bitter."
Using Danish PROLOG coffee, it is cherished for its bright, fruity flavor. Its distinctive feature is a sweet and gentle taste that spreads as soon as you take a sip.
The secret to its flavor lies in "meticulousness" and "emotional stability."
They also prioritize sourcing coffee beans that resonate with people and their lifestyles,
striving to consistently provide coffee that offers a comforting "Ah, this is the taste!" experience every time you drink it.
When I asked Mr. Minemura the same question as last time, "What do you value most when brewing coffee?", he gave the same answer today, which made me realize "the importance of remaining unchanged."
While they hope to open a new store someday,
for now, they want to prioritize the customers who visit their current shop and continue to make it a coffee shop that is close to people's lives. They also expressed their eagerness for event visitors to experience their coffee firsthand.
