"The Story of SALUMERIA ARTIGIANA Edasawa"
Shirokane Yazawa Meat Shop, located in Nishi-Azabu.
The shop is filled with carefully selected wagyu beef.
For meat lovers, it's a feast for the eyes.
Unusual for a butcher shop in Japan,
the interior design shows attention to detail, down to every light fixture.
It's just like a grocery store overseas.
↑Inside Shirokane Yazawa Meat Shop
In a corner of the shop stands "SALUMERIA ARTIGIANA Edasawa," a meat brand selling exquisite processed meats such as sausages and hams. We visited the shop and interviewed Mr. Edasawa, the director.
The brand's creation was inspired by what he experienced while training as a chef in Italy.
An overwhelming variety of prosciutto and sausages displayed in Italian supermarkets.
And the high quality and diversity he found there.
He wanted to bring that same inspiring experience to Japan.

SALUMERIA ARTIGIANA Edasawa offers a special selection of processed meats that combine carefully selected Japanese meat with Italian techniques and essence, and most of their products are additive-free. They focus on bringing out the natural flavor of the meat by using high-quality ingredients.
Mr. Edasawa, with his experience as a chef, values seasoning that considers the "situation in which it will be eaten," taking into account accompanying drinks and cooking methods.
Just when we visited, a new product, "beef prosciutto," was in the making.
Since beef fat has a lower melting point than pork, this prosciutto melts in your mouth.
It's sure to be exquisite.
It's currently undergoing curing, in time for the event.
This time, we visited SALUMERIA ARTIGIANA Edasawa and introduced the atmosphere of the shop and the brand's commitment as told by Mr. Edasawa.
Next time, we will feature a story about "Shunka Hourouki," which is scheduled to exhibit at the market. Stay tuned!
