“The Story of "Shunka Horoki"”

A "traveling patissier" who journeys across Japan, making jams from fresh fruits harvested in each region.
Are you familiar with such an artisan?
This time, we interviewed Mr. Kokubo, director of "Shunka Horoki," the "traveling patissier" who will be exhibiting at NiOR Market, to learn about how he started his brand and his aspirations.

Mr. Kokubo's activities as a "traveling patissier" began when he started traveling to farms all over Japan, packing a copper pot in his suitcase.



He had always valued his interactions with producers in various regions as his life's work, but with the advent of the COVID-19 pandemic, it became difficult to meet people.
At the same time, producers, struggling with farm work, faced a decline in fruit consumption worldwide, forcing them to discard the fruits they had painstakingly grown.

Upon hearing this, Mr. Kokubo thought, "Is there anything I can do?" This led to the birth of the "traveling patissier," driven by the desire to "convey the various stories behind growing, harvesting, and consuming fruits, and their wonderful qualities."

He even mentioned, "Sometimes I set up a tent on the farm and stay overnight to understand the quality of the ingredients."
This anecdote truly conveys his passion as an artisan.

When asked why he chose to turn these carefully selected fruits into jam, he gave a convincing answer: "I thought making jam was good because it contains the most fruit of any dessert."
The jams, which capture the fruits of the regions visited on his travels while experiencing the four seasons, are loved as "the freshest jams in the world."

When we actually tasted it, it was like a dessert.
A spoonful of it brought to mind the producers he met on his travels and even the scent of the soil, making it a "jam that shows you scenery."

Mr. Kokubo shared his message, saying, "Through this activity, I want to provide customers with the feeling of 'being on a journey themselves.'
I hope they feel 'joy' when even an ordinary jam makes their morning toast special."
